Quick week!

With two snow days, the week has flown by! We headed out to support my school's basketball team on Friday night and the boys had a blast munching on purple popcorn and cheering on the 'purple' guys. My school had a purple game to raise money for cancer research. It was so cool to see the gym transformed from our usual green to purple (complete with purple wigs). What a great way to show our love and support for those who are battling cancer. This morning, we got up and attended the pancake breakfast at Andrew's school. So far we have had a pretty eventful weekend! Not sure what the rest of the day has in store but there is no rest around the Kimball household!

Fontina Asparagus Tart!

This was so yummy!

Fontina Asparagus Tart

Ingredients

  • 1 pound fresh asparagus, trimmed
  • 1 sheet frozen puff pastry, thawed
  • 1/2 pound fontina cheese, shredded, divided
  • 2 tablespoons lemon juice
  • 1 teaspoon grated lemon peel
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  • In a large skillet, bring 1 in. of water to a boil; add asparagus. Cover and cook for 3-5 minutes or just until crisp-tender; drain.
  • On a lightly floured surface, unfold puff pastry. Roll into a 16-in. x 12-in. rectangle; transfer to a parchment paper-lined baking sheet. Bake at 400° for 10 minutes or until golden brown.
  • Sprinkle 1-1/2 cups cheese over pastry. Arrange asparagus on top; sprinkle with remaining cheese. Combine the lemon juice, lemon peel, oil, salt and pepper; sprinkle over top. Bake 10-15 minutes longer or until asparagus is tender and cheese is melted. Slice and serve warm. Yield: 24 servings.

Another SNOW day!

Only in Michigan can we go from Blizzard to 50 degrees to more snow in a matter of two weeks! I guess I will enjoy another day off while I can...but I am ready for warmer weather. :) Well, I guess we're off to make some brownies!

I think my boys still think it's...

Christmas! This is what they were doing this morning:

I FAIL!!

As a Mom, that is, when I realized I forgot to send Andrew with his 100 pennies for his hundred day party on Wednesday! Thankfully it didn't seem to bother him and he didn't even bring it up until I took his papers out of his bag and saw his Hundred Day booklet. I am sure there will be more moments that I will forget things but I felt awful. For now, though, we have a dry erase calendar on the fridge so that we can write everything down for both boys so I don't forget anything else. :)

We had quite the Sunday! We went to church, came home for a couple hours, and headed out for an eventful Sunday! While the boys did this:

Now it is time to eat dinner and put the boys to bed! They are exhausted!

Early Morning Fun!

A day to celebrate!

We have had a busy weekend so far! Looking forward to having some down time tonight. Ryan's grandma passed away on Monday at 98 years of age. She was a faithful follower of God and although she will be missed, we know she is having a party up in heaven with her husband and the other family and friends who have gone before her. We celebrated and remembered her life today at the memorial service and it just makes me more aware of how important it is to have Jesus at the center of our lives. What a blessing to live for 98 years and to now spend eternity with the Lord!

Life is Precious!

I find it so easy to take my life for granted. I get caught up in everything going on in life that I rarely slow down and enjoy the moment. Since we have had two snow days last week, I have had some time to just sit down, reflect, and cherish the gifts I have been given. I have two wonderful, rambunctious, energetic, loving boys and a wonderful, supportive husband who loves me. Time passes by and I didn't even see it zoom by....I have a 4 and 5 year old? I swear they were 1 and 2 last week..weren't they? I want to savor every bit of life and enjoy it before it is gone. Ryan's 98 year old grandma is getting ready to meet her husband at the gates of heaven...wow, what a full life she has lived! I can't imagine what it feels like to know that I have come full circle....I sure hope I do the things that God wants me to do before I reach that time. I'll leave you all with one of my favorite songs:

Blizzard of 2011!

Really? We live in Michigan people, aren't we supposed to get snow! There is a ton of it but it will be all right. :) This morning I could barely get the front door open enough to let the dog out....so glad we had a snow day! So far the boys and I played in the 14 inches of snow (some parts with more), shoveled off the front porch, baked and brought some fresh out the oven cookies to the neighbor who so graciously snow blowed our driveway. We will be baking brownies and making chicken chili later...we are making the most of our snow day.

Now the boys are playing with their cars in rice and barley! They can easily spend 45 minutes to an hour playing with this.

Michael started school!

Michael started preschool! He absolutely loves it! He loves learning and is soaking up everything! He enjoys going to school and wishes he could go every day! He wakes up each morning and asks, "Is it a school day, Mommy?" I sure hope this excitement for school lasts for a long time.
